Dill, done like it means it

Most dill pickles turn up soggy and apologetic. These don't. ACIDE start with Kirby cucumbers — the short, dense, bumpy ones that pickle houses actually want — cut them into thick crinkle chips and drop them into a brine carrying fresh dill, dill seed, garlic and black peppercorns. Cold, crisp, and the reason the jar never makes it to the second week.

The flavour

Garlic and dill land first, green and aromatic. Apple cider vinegar runs underneath the whole thing, clean and sour without turning acrid. The finish is black pepper and dill seed — a faint bitter-anise edge that keeps it savoury rather than sweet. There's a whisper of sugar in there, but it's holding the balance, not making a bread-and-butter pickle out of it.

How to cook with it

  • Stack three or four chips on a smash burger the second the cheese goes on — the residual heat softens the edges without cooking the crunch out.
  • Serve them cold and straight from the fridge alongside hot fried chicken. The temperature gap is doing as much work as the vinegar.
  • Layer them through a schnitzel sanga with a swipe of mustard — they cut the crumb's fat and stop the whole thing eating heavy.
  • Put the jar on the cheese board next to a sharp cheddar and a rillette. The dill resets your palate between the rich stuff.
  • Rogue move: dice a few chips and stir them into tartare sauce. Better than anything from a jar with a boat on it.

In the jar

Thick crinkle-cut rounds of cucumber, pale green and still firm, stacked in a clear brine with fronds of fresh dill and whole peppercorns drifting between them. The ridges hold sauce and dressing — which is the whole point of a crinkle cut.

FAQ

Are these hot? No. The bite is dill, garlic and vinegar — there's no chilli in the jar.

Why Kirby cucumbers? They're denser and less watery than a standard slicing cucumber, so they hold their snap in brine instead of going limp.

Are they sweet? Barely. There's a little sugar for balance, but these sit firmly on the sour, herby side.

Are they gluten free? There are no gluten-containing ingredients listed, but ACIDE don't carry a certified gluten-free claim, so we list them as gluten friendly. Always check the physical label.
