The flavour & heat

Cayenne chilli lays down a gentle, savoury warmth up front, roasted onion and garlic build the savoury middle, and lightly smoked black Périgord truffle does the heavy lifting on the finish — earthy, luxurious and unmistakable. It's flavour first, gentle warmth second.

How to cook with it

• Drizzled over pizza or a smashed burger
• Stirred through pasta for instant swagger

Ingredients: Cayenne chilli (29%), onion, garlic, white vinegar, brown sugar, olive oil, salt, parsley, food acid (330), xanthan gum, black Périgord truffle (1%), truffle essence.

The Rub Smuggler's Verdict

Now this one I had to smuggle past customs in me good coat — top-shelf truffle doesn't come cheap or quiet. Drizzle it over a steak you've crusted with our Hickory Smoked SPG, then for a proper restaurant trick rub the same steak with a little BBQ Mafia Steakout first. And — between you and me — it's outrageous stirred through mac and cheese finished with a knob of Rum and Que Umami Truffle Butter. Don't tell the border patrol.
