Olive is the wood Natural Smoke's own label calls "unique" and "very floral," and it's not overselling it. A dense wood, hand processed and bagged in Myponga, South Australia, that leans into Mediterranean-style cooking rather than classic backyard BBQ.

The flavour

A distinctive, floral smoke unlike the fruit woods or the eucalypts in the rest of the range. Rated excellent on poultry and seafood, good on beef, pork and lamb — reach for it specifically when the menu has a Mediterranean lean.

Perfect on

• Whole fish or prawns on the smoker — one of only two Natural Smoke woods rated excellent on seafood.
• Chicken with lemon, oregano and garlic, or anything else Mediterranean-inspired.
