Dirty Bird is the rub that put Kosmos Q on the map. Hot Dirty Bird is that same sweet-heat chicken rub with the chilli pepper cranked right up — all the brown-sugar bark and rich colour you know, now with a proper pepper-forward kick. It's Kosmos' fieriest Dirty Bird.

The flavour

Brown-sugar sweetness and savoury paprika-and-garlic depth up front, then the chilli pepper climbs into a lingering warmth on the finish. Balanced heat that builds without burying the bird.

How to cook with it

• Pat the poultry dry, coat generously and rest 20–30 minutes before cooking.
• Smoke, grill, roast or fry — brilliant on wings, thighs and whole birds.
• Pair with a sweeter finishing sauce or glaze to balance the added heat.
• Not just chicken: try it on pork ribs, pork shoulder and turkey.

A deep red-brown rub with a medium grind that sets a rich, dark bark. Heat sits around 6/10 — hot, but sweet enough to stay moreish.

How hot is it? Hot — noticeably spicier than the original Dirty Bird, but balanced by brown-sugar sweetness so the flavour still leads.
