The flavour

Same savoury, toasty shallot-and-garlic base as the Original, but the Carolina Reaper turns that warm 1983 hum into a slow, serious burn. It builds late and lingers — fruity, fiery and moreish rather than just painful. Big flavour first, then the fire catches up with you.

How to cook with it

• Toss it through hot wings, or dunk them straight into it for a Reaper-level finish.
• Spoon over noodles, ramen or fried rice at the end when you want the plate to fight back.
• Drizzle across ribs, dumplings or grilled meats straight off the BBQ.
• Stir a little through mayo or sour cream for a fiery dipping sauce.
• Start with half a spoon — the Reaper builds. Give the jar a stir first.
